How to make Cilantro Mint Chutney | Mint Coriander chutney | green chutney

ingredients :
- 1 cup fresh cilantro (coriander leaves)
- 1 cup chopped mint leaves
- 1 medium sized green chilly
- 4-5 cloves of garlic
- 1 tsp lime juice
- 1 tsp cumin powder
- 1 tsp salt /black salt/ edible rock salt , as required
- 10-12 cashew nut
- pinch of sugar
- 1/2 tbsp of mustard oil
- 3-4 tbsp of water for blending

pluck the cilantro leaves and chop off the roots. rinse it well at least 3-4 times so that dirt can be removed. now also pluck the mint leaves and discard all the thick stem. if you will use the stem your chutney can be bitter. rinse both the leaves well and drain the water.
I add cashew nut into that to enhance the colour and thickness. it taste super tasty with silky texture of cashew nut.
grind or blend all the ingredients until smooth paste. use little amount of water if you want thick variation chutney. then add salt , cumin powder and lime juice and blend again.
furthermore, i added pinch of sugar, bit of extra cumin powder and salt also because i always like sharp taste of chutney or dip . few drop of mustard oil that can enhance the taste even more better. mix it well.
you can store your cilantro mint chutney in an airtight container in refrigerator. but i try to make small batch of green chutney it really tastes best when made fresh.
you can serve this cilantro mint chutney along with bread roll , dahi kabab , chaat , fritters and paneer tikka etc.
Notes:

you can add some yogurt /curd instead of cashew nut. curd will also give the bright colour to the chutney and tangy taste.

you can add some amla /gooseberry.

if you dont like mustard oil flavor then totally can skip this ingredient.

during summer raw mango are easily available, you can add few slice of raw mango that will enhance the tangy taste of chutney.

to give south indian touch add some grated coconut into that, it tastes even delicious with dosa.
